Ingredients

  • 2 cups all-purpose flour
  • 4 eggs
  • 1/2 cup milk
  • 1/2 tsp nutmeg
  • 2 cups mixed mountain cheeses (Emmental, Appenzeller), grated
  • 2 onions, thinly sliced
  • 3 tbsp butter
  • Salt to taste

Instructions

  1. 1Whisk flour, eggs, milk, nutmeg, and salt into a thick, elastic Spätzle batter.
  2. 2Press the batter through a spätzle press or colander into a pot of boiling salted water.
  3. 3Cook until the knöpfle float to the surface, then remove with a slotted spoon.
  4. 4Sauté onions in butter until deeply golden and caramelized.
  5. 5Layer the cooked knöpfle with the grated cheese in a warm dish, tossing until melted.
  6. 6Top with the caramelized onions and serve immediately.
