Ingredients

  • 1.5kg potatoes, peeled
  • 1 onion, grated
  • 200g bacon, diced
  • 2 eggs
  • 1/4 cup semolina or flour
  • 1 cup milk
  • Salt and pepper to taste
  • Sour cream for serving

Instructions

  1. 1Preheat the oven to 200°C (400°F) and grease a baking dish.
  2. 2Grate the potatoes finely, along with the onion, then drain off excess liquid, reserving the starch that settles at the bottom.
  3. 3Fry the diced bacon until it renders some fat and turns lightly crisp.
  4. 4Combine the grated potato and onion mixture with the reserved starch, most of the fried bacon, eggs, semolina, milk, salt, and pepper.
  5. 5Pour the mixture into the prepared baking dish, spreading it evenly, and scatter the remaining bacon on top.
  6. 6Bake for about 60-75 minutes until the top is deeply golden brown and a knife inserted comes out clean.
  7. 7Let the kugelis rest for 10 minutes before cutting into squares.
  8. 8Serve hot with a dollop of sour cream.
