Nsima ndi Ndiwo

Ingredients
- 2 cups maize (corn) flour
- 4 cups water
- 300g leafy greens (chinaka or rape), chopped
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 tbsp vegetable oil
- 1 tbsp ground peanuts (optional)
- Salt to taste
Instructions
- 1Bring half the water to a boil in a heavy pot.
- 2Mix the maize flour with the remaining cold water to form a smooth paste, then stir into the boiling water.
- 3Cook, stirring constantly, until it thickens into a thick porridge, then reduce heat and keep stirring vigorously to remove lumps for about 10 minutes until stiff and smooth (this is the nsima).
- 4Meanwhile, heat the oil in a separate pan and sauté the onion until soft.
- 5Add the tomatoes and cook until they break down into a sauce.
- 6Stir in the chopped greens and ground peanuts, and cook for 8-10 minutes until wilted and tender.
- 7Season the relish (ndiwo) with salt and serve alongside the nsima, shaping the nsima into balls to scoop up the relish.
