Fakoye (Jute Leaf and Peanut Sauce)

Ingredients
- 1 lb fresh or frozen jute leaves (or spinach), chopped
- 1/2 cup peanut butter
- 1/2 lb smoked or dried fish, flaked
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 scotch bonnet pepper, minced
- 3 tbsp vegetable oil
- 2 cups water or stock
- Cooked rice, for serving
Instructions
- 1Heat oil in a pot and sauté onion and tomato until softened.
- 2Add water and bring to a simmer, then whisk in the peanut butter until smooth.
- 3Stir in the chopped jute leaves and scotch bonnet, and simmer 15-20 minutes until leaves are tender and the sauce thickens.
- 4Add the flaked fish and simmer 10 more minutes.
- 5Season with salt to taste.
- 6Serve hot over rice.
