Fakoye (Jute Leaf and Peanut Sauce)

Ingredients

  • 1 lb fresh or frozen jute leaves (or spinach), chopped
  • 1/2 cup peanut butter
  • 1/2 lb smoked or dried fish, flaked
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 scotch bonnet pepper, minced
  • 3 tbsp vegetable oil
  • 2 cups water or stock
  • Cooked rice, for serving

Instructions

  1. 1Heat oil in a pot and sauté onion and tomato until softened.
  2. 2Add water and bring to a simmer, then whisk in the peanut butter until smooth.
  3. 3Stir in the chopped jute leaves and scotch bonnet, and simmer 15-20 minutes until leaves are tender and the sauce thickens.
  4. 4Add the flaked fish and simmer 10 more minutes.
  5. 5Season with salt to taste.
  6. 6Serve hot over rice.
