Ingredients

  • 800g beef or lamb, cubed
  • 300g smooth peanut butter
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 2 tbsp tomato paste
  • 3 cloves garlic, minced
  • 1 scotch bonnet chili, whole
  • 2 carrots, chopped
  • 1 small cabbage, quartered
  • 2 tbsp vegetable oil

Instructions

  1. 1Heat the oil in a large pot and brown the meat cubes on all sides.
  2. 2Add the onion and garlic and cook until softened.
  3. 3Stir in the tomatoes and tomato paste, cooking until it forms a thick sauce.
  4. 4Add enough water to cover the meat, add the whole chili, and simmer covered for 30 minutes.
  5. 5Dissolve the peanut butter in a cup of the hot cooking liquid, then stir it into the pot.
  6. 6Add the carrots and cabbage and simmer uncovered for another 25-30 minutes, stirring occasionally, until the sauce thickens and the meat is tender.
  7. 7Remove the whole chili before serving, and season with salt.
  8. 8Serve hot over steamed rice.
