Ingredients

  • 8 thin beef slices
  • 150g minced pork
  • 2 hard-boiled eggs, quartered
  • 4 slices bacon, chopped
  • 1 onion, finely chopped
  • 2 tbsp breadcrumbs
  • 400g crushed tomatoes
  • 1 cup red wine
  • 2 tbsp olive oil
  • Kitchen string, for tying

Instructions

  1. 1Mix the minced pork with half the chopped onion, chopped bacon and breadcrumbs to make the stuffing.
  2. 2Lay out the beef slices, place a portion of stuffing and a wedge of hard-boiled egg on each, and roll up tightly, tying with kitchen string.
  3. 3Heat the olive oil in a heavy pot and brown the beef rolls on all sides.
  4. 4Remove the rolls and sauté the remaining onion in the same pot until soft.
  5. 5Return the rolls to the pot, add the crushed tomatoes and red wine, and bring to a simmer.
  6. 6Cover and cook over low heat for 1.5 hours, turning occasionally, until the beef is very tender and the sauce has thickened.
  7. 7Remove the string, slice if desired, and serve with the sauce over mashed potatoes or rice.
