Mauritian Briani

Ingredients
- 3 cups basmati rice, rinsed
- 2 lb chicken, cut into pieces
- 1 cup plain yogurt
- 2 onions, sliced
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 2 tbsp briani masala spice blend
- 4 potatoes, halved
- A pinch of saffron soaked in warm milk
- 1/4 cup oil or ghee
Instructions
- 1Marinate the chicken in yogurt, garlic, ginger, and briani masala for at least 1 hour.
- 2Parboil the rice until about 70% cooked, then drain.
- 3Fry the onions in oil until golden brown; set half aside for garnish.
- 4In a heavy pot, layer the marinated chicken and potatoes with the remaining fried onions.
- 5Top with the parboiled rice, spreading evenly.
- 6Drizzle the saffron milk over the rice and cover tightly with a lid.
- 7Cook over low heat for 35-40 minutes until the chicken is cooked and the rice is tender.
- 8Garnish with reserved fried onions and serve hot.
