Ingredients

  • 2 cups flour
  • 3/4 cup water
  • 1 lb mutton or beef, sliced thin
  • 1 onion, sliced
  • 2 carrots, julienned
  • 1 potato, sliced
  • 1 cup cabbage, shredded
  • 2 tbsp oil
  • Salt and pepper, to taste
  • Cumin, to taste

Instructions

  1. 1Knead flour and water into a firm dough, rest 20 minutes, then roll thin and cut into wide noodle strips.
  2. 2Brush the noodle strips lightly with oil and layer them loosely so they don't stick, then set aside.
  3. 3Sear the sliced meat in a hot, heavy pot until browned.
  4. 4Layer the onion, carrots, potato, and cabbage over the meat.
  5. 5Place the noodle strips on top, cover tightly, and steam over low heat for about 20 minutes without stirring.
  6. 6Once everything is cooked through, toss all the layers together thoroughly with salt, pepper, and cumin.
  7. 7Serve hot in bowls.
