Harira (Moroccan Lentil and Chickpea Soup)

Ingredients

  • 1/2 lb lamb or beef stew meat, diced small
  • 1 onion, finely chopped
  • 2 celery stalks, chopped
  • 1 (14 oz) can diced tomatoes
  • 3 tbsp tomato paste
  • 1 cup brown lentils, rinsed
  • 1 cup chickpeas, cooked
  • 1 tsp turmeric
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 8 cups water or stock
  • 1/3 cup flour whisked with 1 cup water (tadouira)
  • 1/2 cup fresh cilantro and parsley, chopped
  • 2 tbsp lemon juice

Instructions

  1. 1In a large pot, brown the meat with onion and celery over medium heat.
  2. 2Stir in turmeric, ginger, cinnamon, tomato paste, and diced tomatoes; cook 5 minutes.
  3. 3Add water, lentils, and chickpeas; bring to a boil, then simmer 35-40 minutes until lentils are soft.
  4. 4Whisk the flour-water mixture until smooth and stir into the soup, simmering 5 minutes until slightly thickened.
  5. 5Stir in cilantro, parsley, and lemon juice.
  6. 6Season with salt and pepper and serve hot with dates or Moroccan bread.
