Ingredients

  • 1 kg beef or game meat, cubed
  • 3 onions, chopped
  • 4 carrots, chunked
  • 3 potatoes, chunked
  • 1 small pumpkin, chunked
  • 2 tbsp flour
  • 2 cups beef stock
  • 1 cup red wine
  • 3 cloves garlic, minced
  • 2 bay leaves

Instructions

  1. 1Heat oil in a three-legged cast-iron potjie pot set over an open fire or coals.
  2. 2Brown the meat in batches until well seared, then set aside.
  3. 3Sauté the onions and garlic in the same pot until softened.
  4. 4Sprinkle in the flour and stir to coat, then return the meat to the pot.
  5. 5Pour in the stock and red wine, add the bay leaves, and bring to a gentle simmer.
  6. 6Cover and cook low and slow for about 1.5 hours without stirring, letting the coals do the work.
  7. 7Layer the carrots, potatoes and pumpkin on top without stirring them in, cover again, and continue cooking for another 45-60 minutes until all is tender.
  8. 8Gently fold the vegetables into the stew just before serving, and serve hot straight from the pot.
