Pandanus Cake

Ingredients

  • 2 cups cooked pandanus fruit pulp
  • 2 cups flour
  • 1 cup sugar
  • 3 eggs
  • 200ml coconut milk
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 100g butter, melted

Instructions

  1. 1Preheat the oven to 175°C (350°F) and grease a baking tin.
  2. 2Beat the eggs with sugar until pale and slightly thickened.
  3. 3Stir in the pandanus pulp, coconut milk and melted butter until well combined.
  4. 4Sift in the flour, baking powder and salt, and fold gently until just combined into a smooth batter.
  5. 5Pour the batter into the prepared tin and smooth the top.
  6. 6Bake for 35-40 minutes until a skewer inserted into the center comes out clean and the top is golden.
  7. 7Cool in the tin for 10 minutes before turning out onto a rack.
  8. 8Slice and serve warm or at room temperature.
