Stamppot met Rookworst

Ingredients

  • 1 kg potatoes, peeled and cubed
  • 500g kale, chopped (or endive/sauerkraut, for variations)
  • 4 rookworst (smoked sausage)
  • 100ml milk, warmed
  • 50g butter
  • 1 onion, chopped
  • Salt and pepper to taste
  • Mustard, for serving

Instructions

  1. 1Boil the potatoes in salted water until very tender, about 20 minutes.
  2. 2Meanwhile, blanch the kale briefly in boiling water, then drain well.
  3. 3In a separate pot, gently simmer the rookworst in water for about 15-20 minutes until heated through.
  4. 4Drain the potatoes and mash with the warmed milk and butter until smooth.
  5. 5Sauté the onion until soft and stir it into the mashed potatoes along with the blanched kale.
  6. 6Mash and fold everything together until well combined, seasoning with salt and pepper.
  7. 7Slice the rookworst and either mix into the stamppot or serve whole alongside.
  8. 8Serve hot with mustard on the side.
