Ingredients

  • 2 lb pork trotters and knuckles
  • 1 lb chicken thighs
  • 2 carrots, whole
  • 1 onion, whole
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 10 black peppercorns
  • Salt
  • Hard-boiled eggs and parsley, for garnish
  • Mustard or horseradish, for serving

Instructions

  1. 1Place pork trotters, chicken, carrots, and onion in a large pot and cover with water.
  2. 2Bring to a boil, skim the foam, then reduce heat and simmer gently, covered, for 4 hours, until the meat falls off the bone.
  3. 3Remove the meat and vegetables, strain the broth, and season with garlic, bay leaves, peppercorns, and salt.
  4. 4Shred the meat, discarding bones and skin, and discard the boiled onion.
  5. 5Slice the carrots and arrange them with the shredded meat in serving dishes or a loaf pan.
  6. 6Pour the strained broth over the meat and refrigerate at least 6 hours, or overnight, until fully set.
  7. 7Unmold or slice, garnish with hard-boiled egg and parsley, and serve cold with mustard.
