Roasted Breadfruit and Fried Jackfish

Ingredients
- 1 whole breadfruit
- 1 lb jackfish or small whole fish, cleaned
- Juice of 2 limes
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp paprika
- Vegetable oil for frying
- Salt and black pepper to taste
Instructions
- 1Roast the whole breadfruit directly over an open flame or in a 400F oven, turning occasionally, for about 45 minutes until the skin is charred and the inside is soft.
- 2Meanwhile, rinse the fish with lime juice and season with garlic, thyme, paprika, salt, and pepper.
- 3Heat oil in a skillet and fry the fish for 4-5 minutes per side until golden and crisp.
- 4Once the breadfruit is done, let it cool slightly, then peel off the charred skin and core.
- 5Cut the roasted breadfruit into wedges.
- 6Serve the breadfruit wedges alongside the fried jackfish, Saint Vincent’s national dish.
