Mafé (Peanut Butter Stew)

Ingredients

  • 2 lbs beef chuck, cubed
  • 1 cup natural peanut butter
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 3 tbsp tomato paste
  • 2 carrots, sliced
  • 1 sweet potato, cubed
  • 1 scotch bonnet pepper, whole
  • 4 cups water or beef stock
  • 2 tbsp vegetable oil

Instructions

  1. 1Brown the beef in oil in a large pot, then add onion and cook until soft.
  2. 2Stir in tomato paste and chopped tomatoes and cook 5 minutes.
  3. 3Whisk peanut butter with a cup of warm water until smooth, then stir into the pot.
  4. 4Add remaining water, whole scotch bonnet, and season with salt.
  5. 5Simmer covered 35 minutes, then add carrots and sweet potato and cook 20 more minutes.
  6. 6Simmer uncovered until the sauce thickens to a rich, creamy consistency.
  7. 7Serve hot over steamed white rice.
