Ingredients

  • 2 cups rice flour
  • 1 cup coconut milk
  • 1 tsp instant yeast
  • 1 tbsp sugar
  • 1 cup warm water
  • 6 eggs, optional (one per hopper)
  • Salt, to taste

Instructions

  1. 1Dissolve yeast and sugar in warm water and let sit until foamy.
  2. 2Whisk together rice flour, coconut milk, the yeast mixture, and salt into a smooth, thin batter.
  3. 3Cover and let ferment in a warm place for 2-3 hours until bubbly.
  4. 4Heat a small rounded hopper pan (or wok) and swirl a ladle of batter around the sides to coat, leaving a thin pool in the center.
  5. 5Crack an egg into the center if desired, cover with a lid, and cook until the edges are lacy and golden and the center is set.
  6. 6Carefully remove with a spatula and serve immediately with coconut sambol.
