Ingredients
- 1 lb chicken pieces
- 1/2 lb pork ribs
- 1/2 lb beef, cubed
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 scotch bonnet pepper, whole
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
- White rice, for serving
Instructions
- 1Season all the meats separately with salt, pepper, and a little soy sauce.
- 2Melt brown sugar in a large pot until caramelized, then brown the beef and pork in the caramel.
- 3Add onion and garlic and cook until fragrant.
- 4Add the chicken pieces, remaining soy sauce, and enough water to partially cover the meats.
- 5Add the whole scotch bonnet pepper for aroma and heat, being careful not to burst it.
- 6Cover and simmer for 40-45 minutes until all the meats are tender and the sauce has thickened.
- 7Remove the whole pepper before serving hot over white rice.
