Ingredients

  • 1 lb chicken pieces
  • 1/2 lb pork ribs
  • 1/2 lb beef, cubed
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 scotch bonnet pepper, whole
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • White rice, for serving

Instructions

  1. 1Season all the meats separately with salt, pepper, and a little soy sauce.
  2. 2Melt brown sugar in a large pot until caramelized, then brown the beef and pork in the caramel.
  3. 3Add onion and garlic and cook until fragrant.
  4. 4Add the chicken pieces, remaining soy sauce, and enough water to partially cover the meats.
  5. 5Add the whole scotch bonnet pepper for aroma and heat, being careful not to burst it.
  6. 6Cover and simmer for 40-45 minutes until all the meats are tender and the sauce has thickened.
  7. 7Remove the whole pepper before serving hot over white rice.
