Ingredients

  • 2 lbs pomtajer (tannia) root, grated, or substitute taro root
  • 2 lbs chicken pieces, bone-in
  • 3 tablespoons citrus juice (sour orange or lime)
  • 2 tomatoes, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1/4 cup breadcrumbs
  • 2 tablespoons butter
  • Salt and pepper, to taste

Instructions

  1. 1Marinate the chicken pieces in citrus juice, salt, and pepper for 30 minutes.
  2. 2Sauté onion and garlic until softened, then add tomato, tomato paste, and the marinated chicken, browning lightly.
  3. 3Simmer the chicken mixture for 15-20 minutes until partially cooked, then remove chicken and set aside, reserving the sauce.
  4. 4Mix the grated pomtajer root with the reserved sauce and breadcrumbs to form a thick batter.
  5. 5Layer half the pomtajer mixture in a greased baking dish, add the chicken pieces, and top with the remaining pomtajer mixture.
  6. 6Dot with butter and bake at 375°F (190°C) for 45-50 minutes until golden on top and set.
  7. 7Let rest 10 minutes before serving with white rice.
