Ingredients

  • 3 cups basmati rice, rinsed
  • 2 lb beef or goat, cubed
  • 2 onions, sliced
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 2 cinnamon sticks
  • 6 cloves
  • 5 cardamom pods
  • 1 tsp cumin seeds
  • 4 cups beef stock
  • 1/4 cup oil

Instructions

  1. 1Toast cinnamon, cloves, cardamom, and cumin in oil in a heavy pot over medium heat until fragrant, about 1 minute.
  2. 2Add onions and fry until deep golden brown, about 12 minutes.
  3. 3Add garlic and ginger and cook 2 minutes.
  4. 4Add the meat and brown thoroughly on all sides.
  5. 5Pour in the stock, bring to a boil, cover, and simmer 30 minutes until the meat is tender.
  6. 6Stir in the rinsed rice, cover, and cook on low heat 18-20 minutes until the liquid is absorbed.
  7. 7Let rest 5 minutes, fluff with a fork, and serve.
