Ingredients

  • 3 tbsp massaman curry paste
  • 2 cups coconut milk
  • 1 1/2 lbs beef chuck, cubed
  • 2 potatoes, chunked
  • 1 onion, chunked
  • 1/3 cup roasted peanuts
  • 3 tbsp fish sauce
  • 2 tbsp palm sugar
  • 3 tbsp tamarind paste
  • 3 cardamom pods
  • 1 cinnamon stick

Instructions

  1. 1Simmer the thick coconut cream with the curry paste in a pot until fragrant and the oil separates.
  2. 2Add beef and cook, stirring, until coated and lightly browned.
  3. 3Pour in the remaining coconut milk along with cardamom and cinnamon, then bring to a simmer.
  4. 4Cover and simmer gently for 40 minutes until the beef begins to tenderize.
  5. 5Add potatoes, onion, and peanuts, and continue simmering another 20 minutes until the beef and potatoes are tender.
  6. 6Stir in fish sauce, palm sugar, and tamarind paste, adjusting seasoning to taste.
  7. 7Serve hot with steamed jasmine rice.
