Massaman Curry

Ingredients
- 3 tbsp massaman curry paste
- 2 cups coconut milk
- 1 1/2 lbs beef chuck, cubed
- 2 potatoes, chunked
- 1 onion, chunked
- 1/3 cup roasted peanuts
- 3 tbsp fish sauce
- 2 tbsp palm sugar
- 3 tbsp tamarind paste
- 3 cardamom pods
- 1 cinnamon stick
Instructions
- 1Simmer the thick coconut cream with the curry paste in a pot until fragrant and the oil separates.
- 2Add beef and cook, stirring, until coated and lightly browned.
- 3Pour in the remaining coconut milk along with cardamom and cinnamon, then bring to a simmer.
- 4Cover and simmer gently for 40 minutes until the beef begins to tenderize.
- 5Add potatoes, onion, and peanuts, and continue simmering another 20 minutes until the beef and potatoes are tender.
- 6Stir in fish sauce, palm sugar, and tamarind paste, adjusting seasoning to taste.
- 7Serve hot with steamed jasmine rice.
