Curry Crab and Dumpling

Ingredients
- 4 blue land crabs or crab pieces, cleaned
- 3 tbsp curry powder
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 scotch bonnet pepper, whole
- 1 sprig fresh thyme
- 2 tbsp vegetable oil
- 1 (13.5 oz) can coconut milk
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup water
- Salt and black pepper to taste
Instructions
- 1Season the crab pieces with curry powder, salt, and pepper, and let marinate 20 minutes.
- 2Heat oil in a large pot and bloom additional curry powder until fragrant.
- 3Add onion, garlic, thyme, and the whole scotch bonnet pepper, cooking until softened.
- 4Add the marinated crab and sear briefly, then pour in coconut milk and enough water to nearly cover.
- 5Simmer 25-30 minutes until the crab is cooked through and the sauce has thickened.
- 6Meanwhile, mix flour, baking powder, and salt with water to form a firm dough, then roll into small dumpling logs.
- 7Drop the dumplings into the curry pot during the last 12-15 minutes of cooking until they float and are cooked through.
- 8Serve hot in bowls.
