Curry Crab and Dumpling

Ingredients

  • 4 blue land crabs or crab pieces, cleaned
  • 3 tbsp curry powder
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 scotch bonnet pepper, whole
  • 1 sprig fresh thyme
  • 2 tbsp vegetable oil
  • 1 (13.5 oz) can coconut milk
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup water
  • Salt and black pepper to taste

Instructions

  1. 1Season the crab pieces with curry powder, salt, and pepper, and let marinate 20 minutes.
  2. 2Heat oil in a large pot and bloom additional curry powder until fragrant.
  3. 3Add onion, garlic, thyme, and the whole scotch bonnet pepper, cooking until softened.
  4. 4Add the marinated crab and sear briefly, then pour in coconut milk and enough water to nearly cover.
  5. 5Simmer 25-30 minutes until the crab is cooked through and the sauce has thickened.
  6. 6Meanwhile, mix flour, baking powder, and salt with water to form a firm dough, then roll into small dumpling logs.
  7. 7Drop the dumplings into the curry pot during the last 12-15 minutes of cooking until they float and are cooked through.
  8. 8Serve hot in bowls.
