Ingredients

  • 2 cups raw peanuts, ground into a paste
  • 1 lb chicken or beef, cubed
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 3 cups water or stock
  • 2 tbsp oil
  • Salt to taste

Instructions

  1. 1Heat oil in a pot and brown the meat on all sides.
  2. 2Add the onion and cook until softened.
  3. 3Add tomatoes and cook until they break down into a sauce.
  4. 4Whisk the ground peanut paste with a cup of water until smooth, then stir into the pot.
  5. 5Add the remaining water or stock and bring to a gentle simmer.
  6. 6Cover and cook 25-30 minutes, stirring occasionally to prevent sticking, until the meat is tender and the sauce has thickened.
  7. 7Season with salt and serve with matoke, rice, or posho.
