Ingredients

  • 1 1/4 cups pitted dates, chopped
  • 1 cup boiling water
  • 1 tsp baking soda
  • 1 3/4 cups flour
  • 1 tsp baking powder
  • 6 tbsp butter, softened
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 cup heavy cream, for sauce
  • 1 cup brown sugar, for sauce
  • 4 tbsp butter, for sauce

Instructions

  1. 1Pour boiling water over dates and stir in baking soda; let sit 10 minutes.
  2. 2Cream butter and brown sugar until fluffy, then beat in eggs one at a time.
  3. 3Fold in flour and baking powder, then stir in the date mixture until just combined.
  4. 4Pour into a greased baking dish and bake at 350°F for 30-35 minutes until set.
  5. 5Melt butter, brown sugar, and cream together for the toffee sauce, simmering until thickened.
  6. 6Poke holes in the warm pudding and pour some sauce over it to soak in.
  7. 7Serve warm with extra toffee sauce.
