Ingredients

  • 5 lb pork shoulder, bone-in
  • 2 tbsp paprika
  • 1 tbsp brown sugar
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 1 cup apple cider vinegar
  • 2 tbsp hot sauce
  • 1 tbsp brown sugar (for sauce)
  • 1 tsp red pepper flakes
  • Hamburger buns and coleslaw, for serving

Instructions

  1. 1Rub the pork shoulder all over with paprika, brown sugar, salt, pepper, and cayenne.
  2. 2Smoke or roast at 225°F for 7-9 hours, until internal temperature reaches 195-205°F.
  3. 3Meanwhile, whisk together vinegar, hot sauce, brown sugar, and red pepper flakes for the sauce.
  4. 4Rest the pork 20 minutes, then shred it with two forks, discarding the bone and excess fat.
  5. 5Toss the shredded pork with about half the vinegar sauce.
  6. 6Pile onto buns with coleslaw and extra sauce on the side.
