Ingredients

  • 2 racks pork spare ribs, membrane removed
  • 2 tbsp paprika
  • 1 tbsp brown sugar
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • 2 tsp salt
  • 1/4 cup apple cider vinegar, for spritzing

Instructions

  1. 1Mix paprika, brown sugar, garlic powder, onion powder, cayenne, pepper, and salt into a dry rub.
  2. 2Coat the ribs thoroughly with the rub, patting it into the meat.
  3. 3Smoke at 225°F for about 5-6 hours, spritzing with vinegar every hour.
  4. 4Cook until the meat pulls back from the bone and is tender.
  5. 5Rest 10 minutes before slicing between the bones.
  6. 6Serve dry, without sauce, as is traditional in Memphis style.
