Philly Cheesesteak

Ingredients
- 1 1/2 lbs ribeye steak, thinly sliced
- 2 tbsp vegetable oil
- 1 onion, thinly sliced
- 1 green bell pepper, thinly sliced
- Salt and black pepper, to taste
- 8 slices provolone cheese
- 4 hoagie rolls, split
Instructions
- 1Heat 1 tbsp oil on a griddle or large skillet and cook onion and pepper until softened; set aside.
- 2Add remaining oil and cook the sliced steak in batches, chopping it with a spatula as it browns.
- 3Season the steak with salt and pepper and return the onion and pepper to the pan.
- 4Divide the mixture into 4 portions on the griddle and top each with 2 slices of provolone.
- 5Let cheese melt, then scoop each portion into a hoagie roll.
- 6Serve immediately.
