Minnesota Wild Rice Soup

Ingredients

  • 1 cup wild rice, rinsed
  • 4 cups chicken stock
  • 2 tbsp butter
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/4 cup all-purpose flour
  • 2 cups half-and-half
  • 2 cups shredded cooked chicken
  • 1/2 cup sliced almonds, toasted
  • Salt and black pepper, to taste

Instructions

  1. 1Simmer wild rice in chicken stock 40-45 minutes until tender.
  2. 2Melt butter in a separate pot and sauté onion, carrots, and celery until softened.
  3. 3Stir in flour and cook 1 minute, then whisk in half-and-half until smooth.
  4. 4Combine the cream mixture with the cooked rice and its broth.
  5. 5Stir in shredded chicken and simmer 10 minutes until heated through and slightly thickened.
  6. 6Season with salt and pepper and garnish with toasted almonds.
