Ingredients
- 1 lb hand-pulled or thick wheat noodles
- 1 lb beef or lamb, sliced thin
- 2 onions, sliced
- 2 bell peppers, sliced
- 3 tomatoes, chopped
- 2 carrots, julienned
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp cumin
- 1 tsp paprika
- 3 tbsp oil
- Fresh cilantro, for garnish
- Salt and pepper, to taste
Instructions
- 1Heat oil and sear the sliced beef until browned; set aside.
- 2In the same pot, sauté onions, carrots, and bell peppers until softened.
- 3Add garlic, tomatoes, tomato paste, cumin, and paprika, and cook until fragrant.
- 4Return the meat to the pot, add water to make a rich broth, and simmer 30 minutes.
- 5Boil the noodles separately until tender, then drain.
- 6Divide the noodles into bowls and ladle the meat and vegetable broth over top.
- 7Garnish with fresh cilantro and serve hot.
