Ingredients
- 1 lb ground pork, formed into small patties
- 1/2 lb pork belly, sliced thin
- 3 tbsp fish sauce, divided
- 2 tbsp sugar, divided
- 2 cloves garlic, minced
- 2 shallots, minced
- 1/4 cup lime juice
- 1 cup water
- 1 carrot, julienned and pickled
- 1 lb dried rice vermicelli, cooked
- Lettuce, mint, and cilantro, for serving
Instructions
- 1Marinate the pork patties and pork belly slices separately with fish sauce, sugar, garlic, and shallots for 20 minutes.
- 2Whisk together fish sauce, sugar, lime juice, and water to make the nuoc cham dipping sauce, then add pickled carrot.
- 3Grill the pork patties and pork belly over hot charcoal or a grill pan until charred and cooked through.
- 4Add the hot grilled pork directly into the bowl of nuoc cham sauce to soak.
- 5Arrange cooked vermicelli noodles, lettuce, mint, and cilantro on a platter.
- 6Serve the meat and dipping sauce alongside the noodles and herbs for diners to combine as they eat.
