Zhajiangmian (Beijing Fried Sauce Noodles)

Ingredients
- 1 lb fresh wheat noodles
- 1/2 lb ground pork
- 3 tbsp sweet bean sauce (tianmianjiang)
- 1 tbsp yellow soybean paste
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 cucumber, julienned
- 1/2 cup radish, julienned
- 3 scallions, sliced
- 2 tbsp vegetable oil
Instructions
- 1Stir-fry ground pork in oil over medium heat until browned and rendered.
- 2Add garlic and ginger and cook until fragrant.
- 3Stir in sweet bean sauce, soybean paste, Shaoxing wine, and sugar, then simmer for 8-10 minutes until thick and glossy, adding a splash of water if it gets too dry.
- 4Boil the noodles until just tender, then drain well.
- 5Divide noodles among bowls and top with julienned cucumber and radish.
- 6Spoon the fried sauce generously over the noodles and vegetables.
- 7Sprinkle with scallions and toss everything together before eating.
